Today i attempted my first Brisket cooking. Not an easy task. I started prepping around 5am, with the Brine, and a Salt-Pepper-Sugar rub after the brine was finished.
Placed it on the grill (A side by side Propane / Charcoal, with a Firebox on the side for Indirect Heating / Smoking) around 8am. After going through a large amount of Charcoal and Mesquite, i took the once 7 pound brisket off the grill.
OMG did it taste great. Was a tad dryer then i wanted, but i hope to correct that next time. Its all a learning process. At almost 30 bucks per slab, this is not something i can cook often (not to mention taking almost 12 hours of my day)

About 2 hours, thats what recipe called for.

yeah next time it will be longer. Recipe called for 2 hours. Next time ill do it overnight.

minimum 1 hour completely submerged per pound of meat... if you dont inject the brine then at least 24 hours...
